A very popular wine with a rich powerful aroma and palate of blackberries and sweet fruit. The wine is well balanced, with soft tannins and has a dry, long finish. A very high quality second Shiraz.
Vintages:
appearance
Vibrant rim with an intense dark plum coloured core.
bouquet
Licorice and blackberry aromas are complemented with some sweet vanillan oak characters and nutmeg spice, typical of the Shiraz grape in American oak.
palate
The wine shows sweetness of fruit and rich plum and blackberry flavours together with nutmeg and vanilla from oak maturation. The wine has a well-structured palate, with both tannin and acidity enhancing the powerful fruit flavours.
winemaking
This wine is 100% Shiraz from the shorter rows of Shiraz vines growing to the East of the Cellar Door Cottage. The vines are pruned on a special trellis developed by viticulturist Scott Henry. This trellis exposes the grape bunches to air and sunlight with the effect of reduction in disease and improvement in quality.
The fruit was fermented on skins for 8 days and half of the wine was fermented in barrel during the latter stages. Maturation was in 90% American oak and 10% in 2 year old French oak from Alliers for one year, during which time the wine was pumped to tank and returned to oak 3 times.

ageing potential
We suggest this wine, although drinking well now, will improve with time and should be suitable for about 5 years cellaring, if stored under favourable conditions. If you are tempted to open the bottle before 2002, please decant the wine for about 1 hour before serving.
